It's called pudding, but its really more of a gooey cake!
If you are looking for a quick and easy way to use up rhubarb, look no further. Super simple to throw together...Topped with whip cream or ice cream, this yummy cake makes a great dessert!

RECIPE
5 c. Rhubarb, chopped
3/4 c. Sugar
1/2 cup Butter
3/4 c. Sugar
1 Egg
1 tsp. Vanilla
1 c. Flour
1 tsp. Baking Powder
3/4 c. Milk
In a greased 9x9 dish, spread rhubarb and 3/4c. sugar.
Cream butter and 3/4c. sugar, add the next 4 ingredients and mix, and then add the milk.
Pour mixture over rhubarb.
Bake 45 minutes @350'.
Serve warm! Yum!
